Ingredients:
1 1/2 cup red/yellow lentils
8 cups water or vegetable/chicken broth
2 cloves of garlic chopped or sliced
juice of lemons ( amount to your liking)
olive oil
salt
Wash the lentils. Boil the lentils with the water in a large pot until lentils are soft and tender, about 45 minutes.
Use a hand mixer and blend the mixture in the pot until smooth.
Add salt and lemon juice to your liking.
Sautee chopped garlic in 1 cup of olive oil until golden, and while the oil is hot add to the soup.
mix well, and serve hot garnished with croutons and fresh parsley.
