Ingredients:

 

Lentils
A good amount of sliced or diced onions
1 cup long grain rice or bulgur
Olive oil
Salt and pepper

 

 

Directions:


Cook lentils in boiling water until they are parcooked.
Do not overcook the lentils. Strain and leave aside.

Sautee the onions in olive oil for 20 minutes over medium high heat until they are deep golden brown. Stir often to avoid burning.
Take the onions off the heat and add two cups of water. When the water boils add the strained lentils, and the bulgur or rice. Season with salt.
Cover and bring to a boil.
Reduce the heat to low and cook until the liquid has been absorbed and the rice or bulgur has cooked through.
Do not overcook or it will become mushy.
Serve warm topped with fried onions. Mujadara can be eaten with yoghurt, or green salad.

For fried onion topping:
Fry sliced onions in very hot oil until they are golden brown. Remove and drain on paper towels and sprinkle with salt.
Serve on top of Mujadara.
