Ingredients:


Puff pastry squares
Brie cheese
Apricot jam
1 Egg

 

Directions:


Line up your cupcake pan with puff pastry squares, fill with chopped brie cheese (a generous amount) in the bottom and apricot jam over the cheese.  Top with a half sliced dried apricot, and last brush with egg wash.

Bake until puff pastry rises and is golden !!

I came up with this recipe when I had leftover Brie cheese and had to come up with a way to use it before it spoils.. it came out terrific !!! in just 10 minutes you will have a scrumptious pastry.
