Your hero of course is the cheese... try to include a variety of textures and flavors. Most cheese belongs to one of four groups: aged, soft, firm,
or blue. For good variety choose at least one from each group. On your platter, it's a good idea to serve a selection of toast or bread sticks.
Olives and jarred jams are a wonderful accompaniment to cheese, and go great for dipping. One last tip: set out a seperate cheese knife
for each cheese and label the cheeses so you won't have to repeat their names all evening !!!
